The Gut-Friendly Fermented Drink You’ve Probably Never Tried

When it comes to fermented drinks, kombucha tends to steal the spotlight. But if you're looking for a caffeine-free, dairy-free, and naturally probiotic alternative that’s easy to make at home, water kefir might just be your new favourite discovery!

Lightly fizzy and subtly sweet, water kefir is a fermented drink made with live cultures that feed on sugar and minerals, creating a rich brew of beneficial bacteria and yeasts. It’s gentle on the gut, free from strong vinegar flavours, and takes less than two days to brew. And the best part? You can customise it with fruits, herbs, or even coconut water to make it your own!

 

What Is Water Kefir?

Water kefir is made by fermenting sugar water with water kefir grains - a symbiotic mix of bacteria and yeast (often called a SCOBY, though not the same as kombucha’s). These grains convert sugar into probiotics, beneficial acids, and a bit of natural fizz.

Unlike dairy kefir, which is made with milk, or kombucha, which is brewed with tea, water kefir is completely plant-based and caffeine-free. That makes it a lovely option if you're sensitive to stimulants, avoiding dairy, or just not into vinegar-forward drinks (we see you, kombucha skeptics).

 

Health Benefits of Water Kefir

Water kefir is valued for its natural probiotic content. These live microbes can support a more diverse gut microbiome, which plays a key role in digestion, immune function, mental clarity, and even hormone balance!

Because it’s naturally fermented, it also contains enzymes, organic acids, and trace minerals that may help with nutrient absorption and digestive function. And unlike many store-bought probiotic drinks, homemade water kefir contains no additives, preservatives, or sweeteners you can’t pronounce.

How to Make Water Kefir at Home

You don’t need any fancy equipment or lab coats to make water kefir.. just a jar, some filtered water, and the right grains.


Ingredients

  • 100ml jar of water kefir grains
  • 3 tablespoons organic raw sugar
  • 1 tablespoon organic dried sultanas or apricots
  • A pinch of bicarbonate of soda and Himalayan salt
  • 1 litre filtered water
  • A jar with a clip-lock lid and rubber seal

Method

Step 1: First Ferment (12-48 hours)
Combine the kefir grains, sugar, dried fruit, bicarb, and salt in your jar. Add the filtered water and close the lid (not airtight). Leave it at room temperature to ferment for 12-48 hours. In warmer weather, it may even be ready sooner!

The hotter your room = the faster it will ferment

You’ll know it’s working when the drink turns slightly fizzy and gently tart. The dried fruit will float and move around - a good sign that the fermentation is active and thriving.

Step 2: Strain and Second Ferment
Strain the liquid into a new bottle or jar and save your grains for next time. You can snack on the fermented fruit if you’re feeling bold, or compost it.

To level up your flavour and fizz, add some fruit or herbs and let it sit for another 24 hours at room temperature before moving it to the fridge. Voilà! Your own probiotic soft drink/soda.

 

Flavouring Ideas for Water Kefir

Here’s where it gets creative. Because water kefir is so neutral, it takes on flavour beautifully. Some of our favourites:

  • Fresh ginger and raw honey
  • Passion fruit, mango, berries, or sliced peach
  • Coconut water instead of filtered water
  • A splash of molasses or coconut sugar for depth

Just a gentle reminder: always flavour after the first ferment. The grains are alive, and acidic fruits or honey can disrupt their balance.


How Long Does It Last?

Store your finished kefir in the fridge and enjoy it within 1-2 weeks. It will slowly keep fermenting (even in the cold), becoming tangier and fizzier over time. It’s still safe to drink after that - just know the flavour and mild alcohol content (still very low) will increase.

Tip: Open bottles with care. Let’s just say she can be a bit... enthusiastic.
