Plain old hummus is such an easy delicious snack for adults and kids alike. It is high in protein, good fat, fibre, iron and calcium. You can stick to the plain version or start to experiment with flavors. Hummus lends itself to an array of different flavors easily and if it is your go-to snack it’s nice to spice it up sometimes.
INGREDIENTS
• 1 can of organic chickpeas, drained but save a little liquid as below
• 2 tablespoons chickpea liquid
• 1 heaped tablespoon un-hulled tahini
• Juice and zest from 1 lemon
• 1-2 cloves fresh garlic, peeled
• ¼ cup of olive oil
• ½ teaspoon sumac, and some to sprinkle on top
• Salt and pepper to taste
• 1 teaspoon sesame seeds to sprinkle on top
METHOD
Pop your chickpeas on a small oven tray and place in the oven on 180°C to warm for 5 minutes. In the meantime, blend together the tahini, lemon zest and juice, garlic, half the olive oil and sumac in your food processor.
Remove chickpeas from the oven after the 5 minutes is up and pop into a bowl to cool slightly. Add the chickpeas to the processor and whiz it all up for a minute. Add the rest of the olive oil as you blend, plus the chickpea liquid.
Taste and add salt and pepper as needed. Transfer to a warm bowl and top with extra sumac and sesame seeds. Enjoy straight away.
If you are not going to eat the hummus at the time of making, just exclude the oven components.
