Healthy Peanut Butter Cacao Cups (No-Bake, Refined Sugar-Free Chocolate Treat)

These little guys are packed full of good fats. Macadamias in particular contain monounsaturated fats and omega, meaning they are high in antioxidants and help reduce the risk of heart disease. When it comes down to it, this is the type of dessert that gives back, giving you that delicious sweet hit but not spiking your blood sugar levels.

INGREDIENTS

For the base:
• 1 cup macadamias
• 1 cup cashews
• 2 large tablespoons of 100% natural peanut butter
• 5 medjool dates (pitted) or 10 small organic apricots
• 1 tablespoon cacao nibs

• 2 tablespoons hemp seeds
• 2 teaspoon honey or maple syrup (optional)
• 3 teaspoons Amazonia Spiced Cacao Powder (optional)
• Pinch of salt
• ½ cup shredded coconut flakes

For the top:
• 1 block of Loving Earth chocolate (or other plain organic dark choc)
• Cacao nibs to decorate

METHOD

Pop all ingredients for the base into a food processor except water and coconut flakes. Blend until it comes together like a dough. If it gets stuck or looks dry add a teaspoon of water at a time until it comes together.

Use a small cupcake tray or whatever shape you would like. Sprinkle some coconut into each of the mold so that your fudge does not stick. Press the mix into the molds firmly.

Top with melted chocolate and cacao nibs and place in the fridge to set.
